Cappellano Barolo Chinato
Created in the late 19th century by pharmacist‑turned‑winemaker Giuseppe Cappellano of Serralunga d’Alba, Cappellano’s Barolo Chinato is widely recognized as the original and benchmark example of this aromatized Barolo-style elixir. It starts with classic Nebbiolo-based Barolo DOCG—often from the rugged Gabutti cru—infused with a secret blend of cinchona bark, rhubarb, spices (clove, cinnamon, cardamom), and a measured cane-sugar sweetness.
On the nose, it unfolds with a fascinating interplay of balsamic and fruity notes: dried cherry, tar, licorice, alpine herbs, pepper, and hints of violet, chocolate, and cinnamon. The palate is simultaneously rich and harmonious—sweet yet bitter-balanced—with lingering medicinal tannins, dark fruit, spice, and refined Nebbiolo structure, making it the perfect contemplative digestif or an ideal match for dark chocolate
