Santa Maria al Monte Amaro is a classic Ligurian herbal liqueur originally crafted in 1858 at the Sanctuary of Santa Maria al Monte in Genoa and later commercialized by ex‑seminarian Vincenzo Castrovillari before being passed to Nicola Vignale in the early 1900s; today it's produced by Gruppo Caffo, preserving its original 36‑botanical recipe. Made via a meticulous year‑and‑a‑half process—including two months of cold maceration, eight months of barrel aging, then another six months of resting with added alcohol and sugar—this amaro is bottled at a bold 40% ABV.
