This is a legendary and collectable rare Champagne from Pauline Collin-Bérêche, wife of renowned winemaker Raphaël Bérêche and daughter of Ulysse Collin. She has only 2 hectares of old vineyards in Montagne de Reims with Pinot Noir, Chardonnay and Petit Meslier planted on light clays and limestone soil. This wine goes through a slow fermentation in barrels, aging on lees, and four years of cellaring. Finished with no dosage yet showing remarkable depth.
A rich texture around a core of zesty minerality. Delicate honeyed notes balanced by ripe orchard fruit and hazelnut. A clean, mouthwatering finish.
