Paul Nicolle is a family-run domaine in Fleys, Burgundy, known for sustainable farming and precise Chablis, with this Crémant made from 100% Pinot Noir near the Chablis border. Crafted in the traditional méthode champenoise and aged over 16 months on lees, it shows off the region’s Kimmeridgian limestone minerality.
