Jokigen Junmai Ginjo “Rice Label” is crafted by Sakata Shuzo in Yamagata—established in 1949 from a merger of Edo-period breweries—using premium Yamada Nishiki or Oyama Nishiki rice milled to around 55% and fermented with their proprietary Jokigen yeast in soft local water. This Junmai Ginjo exemplifies the bright, fruit-forward Yamagata style, offering medium-full body and a glossy texture.
The nose bursts with a vibrant “fruit basket” of peach, apricot, mango, kiwi, cantaloupe, pineapple, and lemon-lime, while the palate delivers chewy, crisp flavors of Granny Smith apple, muscat grape, caramel apple, white chocolate, brown sugar, and even a spice hint of pink peppercorn.
