Sebastien Girost Brut Champagne 2020
Sébastien Girost is a grower-producer in Congy (within the Côte des Blancs). His Brut Millésime is a single-vintage wine made from a blend of old-vines 50% Chardonnay, 30% Pinot Noir, and 20% Pinot Meunier, all grown on the rich limestone and clay typical of Congy (the oldest parcel of Pinot Meunier was planted in 1929). The grapes are pressed, parcel by parcel, and fermented in used barrels. As in all of his cuvées, there is no malolactic conversion, in order to retain freshness and precision in the finished wine. Following thirty-six months on the lees, the wine is disgorged with a dosage of 4 g/L.
High-toned intensity and structure, quite aromatic and broad on the palate, with layered citrus, subtle brioche, and a driving mineral backbone.
