One of the smallest varieties of agave used to make mezcal, Tobalá is often referred to as the “Rey de los Mezcales” (King of Mezcals).” Growing wildly in high altitudes and in the shade of oak trees, its tiny size yields limited quantities of intensely aromatic mezcal. Historically, Tobalá was the most common variety in Oaxacan mezcal after Espadín to be distilled in single varietal batches. A rare treat by any measure, Tobalá today represents only around 2% of the agave growing in Oaxaca. Tobalá commands respect from producers and consumers alike for its rarity, complexity, and the extraordinary patience required for its cultivation.

Produced in Santiago Matatlán, Oaxaca by Maestro Mezcalero Gregorio Martinez Jarquin, the Tobalá is grown organically and crafted using traditional methods: pit roasting, hand-crushing, natural fermentation, and time-honored distillation, twice in copper stills.

Tobalá mezcal is unlike any other agave spirit. Lovers of it describe a complex interplay of floral and fruit notes - white flowers, citrus zest, tropical fruit, and herb garden complexity - layered over the fundamental smokiness that defines mezcal. This batch was made from Tobalá agaves aged 15 years before harvest. Incredibly aromatic.
