Girard‑Bonnet is a biodynamically farmed, family‑owned domaine in Côte des Blancs—Les Mesnil‑sur‑Oger and Oger Grand Crus—led by Paul Girard, who launched this tiny, terroir‑driven cuvée in 2018 under his experimental Recueil series. It’s a 100% Grand Cru Chardonnay from vines over 50 years old, fermented and aged in stainless steel with indigenous yeasts, partial malolactic, and extended lees contact (55 months), disgorged December 2023 with just 1.5 g/L dosage.
The nose and palate are impossibly precise—green apple, lime blossom, jasmine, and toasted almond layered over a chalky, saline spine and whispers of white-pepper leaf. With a fine, persistent mousse and wafer‑like mineral finish, it’s fresh, elegant, and built to age gracefully over the next decade
