Crafted on Long Island from a blend of heirloom apples—specifically Roxbury Russet, Black Gilliflower and Newtown Pippin grown at the historic Restoration Farm orchard in Bethpage (trees with 30+‑year‑old rootstock, unsprayed). The fruit is hand‑collected as “drops” in late September, naturally fermented and barrel‑aged for approximately ten months before bottling at about 6.8% ABV.  Expect a dry, elegantly textured cider with orchard‑fruit clarity, fine tannic structure, subtle wild‑apple character and a lingering mineral‑edge finish—an authentic expression of Long Island terroir.
