Darling 'Den Chòsta' Chardonnay 2022
Based in Sonoma, founded by Tom and Ashley Darling they make small, boutique-production wines sourced from cool-climate coastal vineyards. Among serious wine drinkers, Darling has developed a reputation as an under-the-radar producer of exceptional quality. Stylistically closer to contemporary Burgundy, if your preference is for Chablis, Puligny-Montrachet, or other high-acid Burgundian styles, Darling is much more likely to appeal to you than traditional rich California Chardonnay. Their ‘Den Chòsta’ (which is Irish for ‘of the coast’) is direct pressed, racked into neutral French barrels for 11 months, with 4 more months in stainless steel afterwards. Production is miniscule.
This is their most acclaimed Chardonnay, showing citrus lift, floral notes, minerality, saline character, moderate ABV and vibrant acidity.
