Cynar is a distinctive Italian amaro launched in 1952 by Angelo Dalle Molle, named after the artichoke (Cynara scolymus) that takes center stage in its blend of 13 botanicals and is now produced by Campari Group . With a modest 16.5% ABV, it's crafted as a bittersweet, herbaceous aperitif/digestif combining artichoke’s vegetal bitterness with caramel richness and warming spice.
On the nose and palate, Cynar offers earthiness, woody herbal notes, stewed vegetables, orange peel, and toffee—balanced but more grounding than bright amari like Aperol. It finishes pleasantly bitter with lingering herbal depth—versatile neat, on ice, or in cocktails like Cynar spritz, Negroni swaps, or even an Argentinian Cynar julep.
